Looks to me like it operates really nicely. Great work, yet another model I'd like to build in the near future.
I am going to guess you are drawing to much power from the servos and it's "resetting" your speed control. You will need higher voltage battery and/or an additional one to operate the servos, this may alleviate your problem, that would be my guess.
