Problem solved!

Thanks for all the help guys!

I took the unit to a bloke who works in the r/c industry yesterday. The good news is the problem didn't show up - though the ESCs were still over heating! What he figured out was that there were some switches leading from the ESC units that were switched to the on position.. apparently they should be off! I think I might have switched them on the first time I opened her up trying to get the remote to connect to the servos, which was another newb error I encountered [all switches on the remote should be switched away from the operator incase anybody else encounters this non-problem]..

I'm gonna give her some time in the sand pit today and fingers crossed the problem doesn't come back.
