Are you thinking of adding another small servo pulling cable to trip the dumping latch, or going to stay with something more like the original toy chain?

Also with the tapered edges on your winch drums, I'm wondering if your cable will want to wrap cleanly or want to climb up the taper and out of the cable bed?
